If you want to go Sister but with light armor, may I recommend going as a Sister Hospitallier? They wear light armor, a dress/robe, and generally don't carry weapons. It's easier to make than a sister costume, with less armor and more sewing.

In that case, you could make a suit of armor that's pared down. Smaller pauldrons, just greaves with no thigh plates, bracers by no elbow plates or upper arm protection, a wider tabard in the front and back, and fuller sleeves. You could still wear the corset and chest plate, but maybe not the full gorget. Maybe a cloak or cape in the colors of your convent, too.
